Creative, innovative and startling are some of the adjectives that have been used to describe M. Vigato´s cuisine. The jury is out on the Apicus question as restaurant critics are unable to agree on the caliber of the kitchen. Is the chef a genius,capable of jazzing up staid traditional dishes into sublime and unusual taste combinations?, Or a pretentious meddler, playing with food that would be far better without the complications? While dishes such as foie gras with chocolate might not be to everyone´s taste, we think that the Apicus experience is great value for a double Michelin star winner and that everyone should go at least once, if only so you can deliver your own verdict after the event.
